Hidden Vegetables Baby Pasta

Assalammualaikum wbt,

Today I am going to share you another easy peasy lemon squeezy baby recipe. It is called Pasta with Hidden Vegetables. This recipe contains a lot of vegetables but since we blended them all, your little picky eater won't notice it. My baby is still small and at his phase to eat everything we gave him. Hope he will be like this forever. Vegetables are good ok? I got this recipe direct from Annabel Karmel's book:  Top 100 Baby Purées.

Ingredients

2 tbsp light olive oil
1 small onion, peeled and chopped
1 clove garlic, peeled and crushed
75g carrots, peeled and chopped
75g courgettes, trimmed and chopped
75g button mushroom, wiped amd chopped
200g ripe plum tomatoes, peeled and deseeded, and chopped
15g unsalted butter
1 x 400g can chopped tomatoes (I didn't use this one)
1/4 tsp brown sugar (I didn't use also)
1 tbsp fresh basil leaves
Freshly grounded black pepper
125g pasta shapes


Steps
1) Heat the oil in the saucepam, add the onion and garlic and sauté for about 3 minutes.

                    

2) Add the carrots and saute for about 4-5 minutes. 

                    

3) Tip in the courgettes and sauté for 2 minutes, followed by the mushrooms, sautéing for 2 minutes.

                   

4) Add the fresh tomatoes and the butter and saute for 2 minutes. 

                   

5) Finally, add the stock, sugar and basil and season with pepper to taste. Cover and cook over a medium heat for 10 minutes, then blend to a paste. 

                   

6) Meanwhile, cook the pasta according to the packet instructions until tender, but without adding any salt. Toss the cooked pasta with the sauce. I use this brand. So far, I only seen this brand and Heinz for baby pasta. Heinz baby pasta is with the star shape.

                    

                    

Let this dishes cool before you portion and freeze them. I tasted it, and it is delicious! Might as well cooking this for adult version too. Just because I have a husband who doesn't prefer vegetables. Pfft.
