I gotta admit, most of my favourite lauk are from my own cooking..ahahaha. And of course, my mother's and Nenek's too. One of my favourite dishes is Ayam Masak Paprik Cili Padi. I never ordered it at restaurant because I don't like it too be so gravy-ish more like soupy texture and it doesn't oily and spicy enough to my liking. Cewahhh haha. It's kind of cheat dish for me because this dish consists of vege & protein, so you do not need to cook them separately. Just one dish and it's complete! Jimat and malas. Haha.
So, here goes the ingredients:
1 whole chicken (cut into 16-pieces, mix with turmeric powder & salt)
Vegetables:
Baby corn (optional)
Carrots (optional)
Cauliflower (optional)
Long beans (optional)
Tomatoes
You can use any type of your favourite vegetables here. Or, if you don't prefer vege, it's ok for not putting them too.
To Sauté or tumis:
5 shallot - blend
3 garlic - blend
2 stalk lemongrass - pound/dititik
A handful or kaffir lime leaves
Cili padi (lots of them if you like it spicy!) - blend
Oyster sauce - 1 spoonful
Chili sauce - 2 or 3 spoonful
Ketchup - 2 or 3 spoonful
Oil
I put some plum sauce too, just to add taste. If you don't have it, it is fine.
Step-by-step:
1) Fry the chicken. In the meantime while the chicken is frying, you can prepare other stuffs too. Remember, work smart! You can save time by doing this.
3) Then, add in blended cili padi and fry until it turns crispy or pecah minyak.
4) Add in all the sauces; oyster sauce, chilli sauce & ketchup. Stir some more, add water if necessary. As you can see below, my cili padi has turned hangus a bit. Haha.
6) Then, put all the vegetables inside and keep on stirring until they soften. Well, not too soft, I like my vege a little bit crunchy. You might want to add some more water at this point if you like it a little soupy. Season with a bit of salt and sugar to taste.
7) Lastly, add in the chicken that we have fried earlier. Mix them all evenly and add in tomatoes as well.
8) You can turn off the heat when tomatoes have turn mushy a bit. Well, it's up to you really. I like my tomatoes soft. ;) Serve with hot steam rice, perghh..memang pedas meletop!
Tadaaaa! You can actually substitute chicken with other proteins as well. The fundamental is the sauce, and the secret ingredient is cili padi..and oh, some love too ;)
